    覆盆子巧克力双色慕斯蛋糕

        lg一个哥们的38岁大寿,七八个人在我们家里聚餐,此君爱好美女,爱好巧克力,但我们一家都喜欢覆盆子的酸甜口味,于是组合各种元素,于是有了这个美女出浴图的覆盆子巧克力双色慕斯蛋糕,覆盆子的酸甜和巧克力的香浓真是绝配,非常值得一试的组合。
        是天气热弄巧克力图案真是让人抓狂,一出冰箱不出半分钟就软化掉。巧克力生日插片上Happy里的a字母也没有完全从模里敲出来,但时间不多也没有办法重新做了,还要做这一大帮人的菜和炒面,天气冷的话巧克力会好操作的多。
     

     
    一、覆盆子慕斯
    材料:
    1.海绵蛋糕8寸或6寸一个
    2.果泥(覆盆子)300g,其他果泥也可以
    3.细砂糖150g
    4.吉利丁片15g
    5.动物性鲜奶油400g
    参照一个台湾的方子,我做了几乎2份的量,所以除了慕斯蛋糕,还做了好几个覆盆子慕斯杯。

     

     

     
    做法:
    1.将海绵蛋糕横切片,并将蛋糕片裁成比活底蛋糕模(或慕斯圈)稍微小一圈的圆形,将其中一片放入蛋糕模中
    2.吉利丁一片片泡入冷水中(一整叠一次放入的话中间会泡不软)
    3.将果泥与细砂糖放入锅中小火煮至糖溶化(冒小泡泡但不沸腾的程度)
    4.将泡好的吉利丁取出,沥干水分后加入果泥中拌至吉利丁完全溶化,离火冷却(一定要冷却到只有一点点温但还不至于凝固的状态后,才能和打发的奶油混合,我以前第一次做慕斯惨败就是因为心急没等冷却就和奶油混合,结果油水分离,成豆腐花状了)
    5.动物性鲜奶油隔冰打至6~7分发(搅拌器划过会留有痕迹,奶油还可以勉强流动的程度)
    6.将拌打至6~7分发的鲜奶油先取1/3至冷却的果泥溶液中拌匀,再将剩余的鲜奶油加入以切拌的方式轻拌至均匀
    7.将做好的慕斯糊倒入模中或慕斯杯中(或用汤匙舀),淹没底层的蛋糕片,再放上一片蛋糕片,再将慕斯糊填至模具或杯子的8分满,放入冰箱冷藏至慕斯凝固即可,如果想要更美观些,可以用覆盆子果泥或任何红色的果汁加nappage做个镜面表层浇在蛋糕上面就可以了
    8.蛋糕脱模时可用吹风机对着模四周外圈吹,或者用热毛巾捂着模外一圈,就很容易脱模了。慕斯杯食用前可以在表面挤上鲜奶油,再以水果,薄荷叶或巧克力片装饰即可
     
    二、巧克力慕斯(6到8寸量,我做的是10寸量,是此方子量的1.5到2倍)
    材料:
    牛奶 120g、蛋黄 2个、砂糖20g(不喜欢太甜可以少加或不加)、黑巧克力 160g、淡奶油 200g、吉利丁片5g

     
    做法:
    1.吉利丁片用冷水泡软,牛奶煮沸离火或者隔水煮加热,砂糖和蛋黄搅匀后慢慢加入牛奶拌匀(这一步比较要紧,牛奶温度火候要掌握好,不能温度太高不然蛋液加入就会成蛋花汤了,只要隔水打半熟即可),再加泡软的吉利丁片拌匀
    2.黑巧克力隔热水溶解,将1分两到三次加入巧克力中拌匀待凉
    3.将淡奶油打至六分发,分2次与巧克力糊拌匀
    4.把第二片蛋糕片放在已凝固的覆盆子慕斯上,再将巧克力慕斯倒入,将模具填至八分满,放冰箱凝固
    5.巧克力慕斯凝固硬后,最后在上面浇上巧克力淋面或其他装饰
     
    三、巧克力淋面: (做了近2倍的量)
    水 80g、淡奶油 60g、可可粉 50g、吉利丁片 3g
    将水加热,加入淡奶油和可可粉搅拌均匀,加入泡软的吉利丁,熄火,过筛一次,待放凉后慢慢淋到慕斯上,放冰箱冷藏至淋面凝固后再脱模
